What I Ate Today - VEGAN

It's Wednesday! Half way through the week! 

I was in a hurry today so breakfast is a protein shake. I mixed one scoop of chocolate orgain protein powder with half a scoop of vanilla vega protein powder and greens. Then I mixed it up with half water half unsweet almond milk. It tastes like a delicious shake and is pretty dang healthy! It's in my silver cup. I also purchased this Hydroflask which is huge and so far it's awesome. It's supposed to keep things cold till the end of time so that will be nice. 


For lunch I got to hang out with my sister and eat a delicious salad bar! Jason's Deli salad bar is THE BOMB and this salad is MASSIVE! 


I wanted a little snack before dinner so I decided to snack on a chocolate peppermint stick Luna bar. 


For dinner I had some blue corn chips with delicious cashew cheeze. It's made by a local company and it is SO delicious!

What I Ate Today - VEGAN

Today is a Tuesday and I have a ton to do at work and after work! 

My breakfast is a smoothie as usual. I made it with a banana, spinach, orgain protein powder and frozen mangos. I like to reuse pickle jars and other jars that we get from Costco. 


Lunch today is a tasty Apple along with these green pea snacks that I bought at Aldi this weekend. Spoiler alert- they're delicious. 


Dinner was my leftover vegan spaghetti bake again along with a generous side of corn. I know it looks questionable, but never judge homemade food by its pictures. 😄


After dinner my parents came by and brought me some delicious cashew cheeze.  I had a few scoops of it with some blue corn tortilla chips.

What I Ate Today - VEGAN

Gooooood morning! I am doing a challenge with my sister to be Vegan for 30 days! 

Breakfast is always a smoothie for me. I had banana, spinach, frozen strawberries, blueberries and mango along with a scoop of chocolate orgain protein powder with a little vega vanille protein and greens. 


Lunch break is going to the dentist so I'm just snacking at my desk! I snacked on some sunflower seeds along with an apple and my tea of course! This will tide me over till my early dinner. 


After the dentist I was a little hungry. So, I smacked on some veggie chips from Sprouts. 


For dinner we had leftovers of veggie, edemame noodle spaghetti bake and it was delicious! 


After dinner I wanted a little snack so I munched on some cashews.

Vegan Whole 30 Day 30

WOW OH WOW I can't believe that this is the last day of whole 30. I feel AMAZING! I have had such a rushed, crazy busy sleepless 30 days and I still feel amazing! I honestly believe that this is due to my change in diet. I can't see myself coming back to a normal standard American diet. I have no wish to go back to feeling lazy and sad all the time!

Vegan Whole 30 Day 29

Yesterday was super busy. 

8 smoooothie! Banan, strawberries, kiwi, spinach and carrots

12 I had lunch with friends.. It consisted of a big salad with lettuce, grilled veggies and salsa for dressing 

6 I made some edemame spaghetti with pasta sauce and spinach with some green beans

7 I cut up a few apples and we dipped them in almond butter

Vegan Whole 30 Day 27

Today is a relax day for us, but since we've been so busy I'm going to be doing lots of laundry and YouTube video filming and editing. We started the day with a nice walk since the weather is so amazing! I was thrown off all day today due to daylight savings time change. 

10 I had a handful of dates with hot green tea before our walk 

2 I munched on some cashews 

7 I sautéed up a couple zucchini and a sweet potato with some cayenne pepper

Vegan Whole 30 Day 26

Today turned out a little unexpectedly. What was going to be a quick run to a grocery store turned into a morning event of visiting four different stores. We had so much fun, but I accidentally burned through breakfast. 

11 potatoes and sauerkraut. It was super delicious. I also had a strawberry hibiscus kombucha. 

3 I had a snack of some tasty lightly salted cashews 

8 we had dinner much later than usual. I cut up some eggplant and cooked it for the first time ever. Very odd plant. Then I made some edemame noddles and threw on some pasta sauce! We had some tasty noodles, eggplant and sauce for dinner!

Goooood morning! It's finally friiiiiiiday! 

8 Smoothie as usual, I had spinach, carrots, banana, strawberries, and blueberries 

11:30 I had a life salad with baked carrot, spinach and squash with salsa for dressing. I also have some potatoes 

5 I had a big bowl of edemame and I split it with my sister. We also had some dried apricot bits which were delicious! 

10 we got home late from Jeff's hockey game and needed a snack. I cut up two apples and we dipped them in almond butter

7 I cut up and we shared and apple with almond butter

12 lunch is the usual of cashews, walnuts, pumpkin seeds along with sugar snap peas 

6 dinner tonight was a huuuuge salad with lettuce, spinach, black olives, cucumber and a vinegarette. I also had a small baked potato with some vegan butter! 

7 I made a tasty drink of lime la croix with some cranberry juice

I can't believe it's day 22 already! This 30 days is flying by and hasn't been nearly as challenging as I had assumed it would be! 

8 SHAKE SHAKE SHAKE. Today I had spinach, carrots, banana, strawberries and blueberries 

12 I had some cashews, walnuts and pumpkin seeds. I also had some sugar snap peas

6 I had a zucchini and squash cooked in a pan with avocado oil and lots of onion and garlic powder. I also have a regular baked potato with vegan butter 

7 I had a tasty drink, la croix lime with some cranberry juice

Vegan Whole 30 Day 21

MONDAY, MONDAY! 

8 Smoothie LYFE. I had spinach, carrots, blueberries and strawberries with some chia seeds 

11 snacking on my cashews, walnuts and pumpkin seeds. I brought some carrots and sugar snap peas to have as well 

5 I made some edemame spaghetti with spinach added in. I put regular pasta sauce on top. I also made a couple cut up potatoes with cut up mushrooms and cooked them in a pan with onion and garlic powder

6 I'm having a la croix lime with a splash of cranberry juice 

7 I cut up a couple of apples to dip into almond butter for Jeff and I to split

Today is going to be a little odd. We have some errands to run and some chores to do. 

10 handful of cashews and a kiwi 

We went on a walk because it so dang nice outside!!

I actually have to work this Saturday, which I'm not super excited about.

I am off of work today. I've been trying to film some videos, get my real estate school done and do some chores. 

8 large smoothie with spinach, carrots, 2 kiwi, strawberries and blueberries 


12 lunch was some tasty veggie stew that I had left over along with some cashews and pumpkin seeds 

7 dinner was a massive salad with lettuce
Mix, spinach, cucumbers and black olives.. So tasty. I also had a fruit cup with grapes, pineapple, cantaloupe and honeydew melon

Vegan Whole 30 Day 16

I am half way through Whole 30 and am feeling very accomplished! 

8 giant smoothie. I used a banana, spinach, baby carrots as well as a few scoops of tropical organic frozen fruit. 

12 Baggie of nuts, a couple cuties

6 I was starving this evening so I went for two sweet potatoes cubed up with baked with avocado oil, salt and cayenne pepper. I also cooked up some delicious green beans with butter, oil, basil and onion powder

Vegan Whole 30 Day 15

HALF WAY THERE 

After today, we will be half way done with Whole 30. I've stopped thinking about it as a temporary thing and started thinking of it as just how I eat now. 

8 giant smoothie as usual! I added half an avocado, a banana, spinach, baby carrots, chia seeds, frozen strawberries and frozen blueberries

12 I got to have lunch with my mom today! I had a huge Greek salad with lettuce, spinach, olives, cucumbers and a  vegan Greek dressing 

7 Dinner was a HUGE baked potato this evening. I added butter as well!

Vegan Whole 30 Day 14

MONDAY! 

It's the start of a fresh week! Hopefully it is a little mor calm than last week.

8 large smoothie made of half an avocado, carrots, spinach, and frozen tropical fruit blend. I think it had strawberries, pineapple, pears and peaches 

11:30 I ate a baggie of cashews, pumpkin seeds and walnuts 

5 I made a baked potatoe with butter, a zucchini cooked in a pan with avocado oil 

7 I got hungry again and ate some cashews and an entire can of olives lol

Vegan Whole 30 Day 13

Sunday, Sunday. One of my favorite days of the week. I am planning on going for a walk and doing a little de cluttering. Then I will finish laundry and meal prep some snacks for the week. 

10:30 I made a smoothie today and I made it a little different than usual. I used a whole avocado, a handful of baby carrots, a bunch of organic frozen strawberries and five dates.. It whipped into a mouse like texture and tasted pretty dang good!

3 I had a big bowl of the veggie stew. There is only one serving left, I don't know if I will eat it or if Jeff will. 

7 I cut up a huge sweet potato into chunks, covered it in avocado oil and tossed in salt and a sprinkle of cayenne pepper

Vegan Whole 30 Day 12

Today is Saturday! We slept in and have some errands to run today and Jeff has been on a fast so I just grabbed a quick breakfast.

10 Banana

11:30 big bowl of veggie stew 

4 lots of cashews. I also made a lime la croix mixed with mango juice. So tasty!

8 I cut up two apples and munched on them with almond butter 


Vegan Whole 30 Day 11

Today I am going to be in a commercial at work so my day is going to be all thrown all off and random. Planning ahead is key for awhile 30 so I'm going to do my best!

7:30 I made a smoothie and had a few sips before we started shooting. I snacked on grapes and cantaloupe during the promo filming 

12 I had my mixed nuts 

2 I ate the lunch I packed which was leftover edemame noodles with spinach and spaghetti sauce

7 I had some delicious veggie stew. It had green beans, carrots, cabbage, potatoes and celery. The base is crushed tomatoes, two containers of veggie broth and a small tomato paste.

Vegan Whole 30 Day 10

Good morning! Today is day 10! A third of the way done! What a journey it has been! I feel like I have adjusted to my new everyday foods very well! 

8 smoothie as usual

12 GIANT SALAD. This salad had lettuce, spinach, calamatto olives and a vinegarette. Very tasty! 

2 I tried drinking a citrus kombucha, but it tasted really off to me. I drank half and pitched the rest which is sad because they're so expensive 

6 I made another vegetable stew in the crockpot this morning and it is delicious! I had a giant bowl with nutritional yeast sprinkled on top just for fun.

Vegan Whole 30 Day 9

This morning I am very tired! I think it has to do with work stress and lack of sleep than a diet change. 

8 giant smoothie as usual. This one has half an avocado, spinach, baby carrots, strawberries, blueberries and raspberries 


12 for lunch I had some missed nuts and a few clementines 

6 dinner tonight was an interesting experiment. I made edemame noodles along with a spicy pasta sauce with spinach. The noodles with pretty good, very unique, but delicious! 

Vegan Whole 30 Day 8

I didn't sleep very well last night. We've had a lot of changes going on at work and I am going to be in a training from 8-5 today so food will be a little tricky. 

8 I ate a giant smoothie as usual

12 I had a bag of mixed walnuts and cashews. I also had celery dipped in almond butter 

5 I pan cooked three red potatoes with avocado oil and onion powder. I also pan cooked a large zucchini with ginger. Very tasty. This and the stew have been my favorite meals so far! I tend to prefer warm foods!

Vegan Whole 30 day 7

Today is Monday and my first whole week of Whole 30! I have mostly been Raw till 4 as well so that's been interesting too! I have been feeling great other than yesterday when I felt super worn down during and after hockey.

8 Giant smoothie with half an avocado, strawberries, magos, carrots, and spinach

11 I have a Baggie of my walnuts and cashews mixed together 

5 I didn't have time to eat like normal at work today. We have had a ton of changes going on lately. So I made a giant bowl of stew for myself and Jeff and ate it allllll!!! We finished off the pot tonight and are already plotting to make another batch!

Vegan Whole 30 Day 6

Almost an entire week down! This morning we are going to play some roller hockey, this is the first time I have done anything super physical since I switched my diet.

9 I slept in a bit and made a huge smoothie, I only ended up drinking half because I ran out of time before we were going to skate. so I grabbed some cashews and ate them. 

12:30 we played roller hockey for a few hours and I didn't feel like my stamina was very good at all. This could have been from whole 30 or it could have been because I had bronchitis for about a month and this is the first time that I did anything very taxing. 

1 I ate some more cashews and drank a la croix with mango juice 

3:30 I ate a huge bowl of stew that I made yesterday. I also had an apple with almond butter. 

7 I had some cashews as well as dehydrated bananas with cinnamon on them. 

Vegan Whole 30 Day 5

We are running chores all day today to I'm going to be snacking in between meals. I woke up feeling pretty dang good this morning. I actually slept through the night without any weird nightmares.

9 smoothie and tea per usual. Spinach, carrots, strawberries, blueberries, mango and chia seeds today

12 I made some ants on a long with celery, almond butter and pieces of dates. They were delicious!!

2 I'm preparing a veggie stew for dinner and as I'm chopping veggies I decide to make a baked potato and eat it with a bit of butter and nutritional yeast 

8 I eat a huge bowl of veggie stew. It was cooked in the crock pot with broth, tomato paste, green beans, potatoes, cabbage shredded and broccoli shredded, carrots and celery. I plan on eating this throughout the week until it's finished.

Vegan Whole 30 Day 4

Goooooood morning! I didn't sleep well again last night. I have been having super vivid dreams. I am going to try to look it up online today and see if this is something others have experienced. I am thinking more clearly and feeling more calm today even though I didn't get much sleep. I feel rather awake and rested. 

8 giant smoothie is devoured 

8:15 I am sipping on another la croix strawberry pineapple with mango juice 

12 for lunch I had the usual of cashews with carrots and sugar snap peas 

I've been feeling hungry lately, I think I need more calories in my day so I decide to get get some potatoes for dinner 

6 I cut up and pan cook three large red potatoes with avocado oil and opinion powder. I also pan cook one large zucchini with avocado oil and ginger and onion powder. This makes me feel full and happy lol

Vegan Whole 30 Day 3

Day 3 here we go! I am very tired this morning. I didn't want to get out of bed. 

6:30 wake up. Sleepy. Want to take a nap already.

8 drink my huge smoothie. It's delicious. It's making me feel a bit better. 


12 I eat my huge spinach and mixed greens salad with olives 

1 I am feeling very shaking and anxious. I was hoping that my lunch would help me move past it but no such luck.

2 I want to punch something. Today is not great 

5 I get home and start to cook dinner.. Cooking makes me feel a bit better

5:30 Jeff has salmon, bacon and scrambled eggs. I feast upon mass amounts of edemame sprinkled in sea salt. I have an apple with almond butter as well

7 I discover a new delicious creation. I mix together a can of la croix strawberry pineapple with just a little bit of mango juice. It's delicious and I love it. 

Overall today was the most rough day yet. I mostly felt anxious and shakey. I wasn't actually craving any foods, but I just didn't feel super great.

Vegan Whole 30 Day 2

Goooood morning! I didn't sleep very well last night.. I had odd nightmares about my job. No good! Outside of that, I work up feeling pretty dang good. I actually feel energetic which seems odd because I figured I would be DRAGGING. I'm excited for day two!

I have had a rash on my face for about a week and I'm not sure if this is a coincidence or not, but I woke up this morning and it is now almost totally cleared up. 

I always drink a lot of water and herbal teas throughout the day.

6:30 wake up

7:30 36 oz smoothie made of spinach, strawberries, blueberries, mango and chia seeds I drink this smoothing over the span of about an hour 



9:30 feeling normal :-)

12 I'm feeling pretty dang good! I ate my carrots, sugar snap peas, cashews and guacamole. I'm planning on eating those two cuties soon! 


5:30 I never ate my cuties but I did have a delicious dinner! I made bacon and salmon for Jeff. I had a huge baked potato with butter and salt. 

Overall today went well! I felt really good and wasn't tired or weak feeling at all! Day 2 was a success.

Vegan Whole 30 Day 1

I started Whole 30 on February 16, 2016. 

Just a little background: I follow a vegetarian mostly vegan diet. Up until this day I had some kind of grain or carb for almost every meal. I work a desk job 7:30-4:30 and I am pretty dang lazy. 

Since I am doing Vegan Whole 30 I am accidentally also following a Raw till Four diet. 

I'll be giving a little update each day for 30 days to keep track of how I'm feeling and what I ate. 

Please keep in mind that throughout the day I drink a large amount of water and herbal and/or decaf teas.

DAY ONE

6:30 Wake up. 

7:30 Ate a large smoothie made of spinach, carrots, chia seeds, banana, blueberries and strawberries

Today I volunteered before work so I was doing some heavy lifting from 8-11 today.

By the time I got back to work I was feeling very hungry. And oddly feverish. 

11 Lunch time. I ate a Baggie of sugar snap peas and carrots along with a cutie and a Baggie of cashews. 

Feeling much better after my lunch.....

12:30 I am daydreaming about swan diving into a trough of spaghetti o's. 

12:34 I realize I haven't gone this long without carbs since I started eating solid foods 

12:47 I work past my pseudo internal meltdown and try to focus on all the good foods I can eat... Dreaming of a sweet potato now 

2:30 Drank half of a Kombucha.. Multi greens flavor and ate a cutie 

4:30 Cook some salmon for Jeff and cube two sweet potatoes for me.. I tossed them in avocado oil, light salt and some cayenne pepper then bake them in the oven. I also have an organic apple with almond butter.

8:00 I usually have a sweet treat around time time. I break down and drink a la croix strawberry pineapple 

Overall today wasn't bad. I had an odd fever feeling most of the day, and was craving some noodles and bread pretty hard core but I got through it!
